Food for Thought

Or maybe I should say…Food because I’m starving!

Baked Mahi with a Poblano Pepper and Corn sauce. Over Vegan Mashed Tata’s and Haricot Verts

Made this lovely meal for myself the other day and thought I’d share; especially since I haven’t posted about food on here in a minute.

Quick recap…it was delicious and satisfying and creamy (surprisingly since there was no diary used in the mash). Overall, I’m happy with how it turned out.

Recipe is quite easy and simple…because there really isn’t one. I just whipped up everything separately and plated them at the end.

Simple ingredients. Simple food. 100% simply satisfying!
